 Raw Carrot, Beet, Mint, Green Onion, and Kaffir Lime Leaf Salad

PostSubject: Raw Carrot, Beet, Mint, Green Onion, and Kaffir Lime Leaf Salad   Thu Mar 10, 2011 7:20 pm

Yesterday I made a salad from food harvested in my garden.

Mix rice wine vinegar (~1TBLS), salt, a bit of red pepper flakes, one small clove of garlic minced,and some sugar, for the base.

The rest of the ingredients are from the garden:
Add
1 Kaffir lime leaf sliced thin but kept intact (too tough too eat). Put in the vinegar and bruise.
1 multiplying green onion, sliced
A few sprigs of mint, shredded
Two small cylindra red beets, grated
3 small carrots diced thinly into half moon pieces

Toss and let sit for a few minutes and adjust salt, sugar and vinegar to taste.
Beautiful colors and delicious!

Had this salad with some sauted swiss chard from the garden, jasmine rice, and raw cashews for lunch.
