Quick Herb Soup

A great way to use fresh herbs from the garden! Also great for a sore throat!
Amounts are approximate. Be very generous with the herbs, they are the backbone of the flavor!

Saute two medium onions, diced, in olive oil and some salt until soft/opaque.
Cover with water and add lots of fresh or dry bay leaf (10 are not too much),
~2-3 tsp chopped rosemary,
handful of thyme sprigs (leave attached to main stem for easy removal after cooking),
15-20 fresh sage leaves
3 sun dried tomatoes chopped or a little fresh,

Simmer ~10min until onions are soft.
Add a handful or two of any type of chopped greens (i.e. Egyptian spinach)

Simmer til the greens are cooked and adjust salt and pepper.

The soup might taste a little thin at this point.

To serve, add a tsp or so of crushed raw garlic in olive oil and some shredded
Parmigiano-Reggiano cheese.

Substitute whatever fresh herbs you have an abundance of!
