Baked cod with tomatoes, lemon, and herbs.

Another simple way to use your fresh herbs!

Place a generous amount of fresh thyme sprigs in a flat bowls and drizzle with olive oil.
Turn and gently press with a fork to coat.

Rub 1-2lbs of cod fillets with lemon juice and place in one layer in a glass baking dish just a little bigger than the fish.
Sprinkle with salt and add:
a handful or more of fresh oregano leaves
5-20 bay leaves (fresh or dry)
a couple diced fresh tomatoes

Layer the thyme sprigs on top and add water up to the top of the fish.

Bake in a preheated oven at 425 degrees until the fish is cooked, 20-30 minutes.
As the fish cooks you can push the thyme down into the water and
adjust the salt and lemon to taste.

Serve with brown jasmine rice. This dish is even better a day after cooking!
